How to make Ben & Jerry’s Ice Cream Bread
Step 1: Prepare your tools and ingredients.
To get started, preheat your oven to 350°F. Also grab your ice cream, flour and a few tools.
You’ll need the following:
- 9” x 5” loaf pan
- Cooking spray
- Two medium sized bowls
- Two mixing spoons
- Ice cream scoop (or two if you don’t want to clean between scoops)
- Wooden skewer or chopstick
- Aluminum foil
Spray the loaf pan with cooking spray and set it aside.
Step 2: Measure the flour
Divide the flour evenly between the two mixing bowls. You should have 1 and 1/2 cups in each bowl.
Step 3: Melt the ice cream
For the next step, the ice cream needs to get totally melted!
I just popped the top off the pints and put them right in the microwave. If you’d prefer, you can also scoop the two flavors of ice cream into separate microwave safe bowls.
I microwaved the pints in 20-30 second intervals, stirring carefully at each interval.
All microwaves are different, so be careful not to actually heat up the ice cream. You just want to get it to a state where it can be poured and easily stirred. Definitely don’t want to cook it.
Step 4: Mix the ingredients.
Next, add one melted pint to one of the bowls with the flour. Then pour the other pint into the other flour bowl. Stir each to combine the ingredients well.
Step 5: Add the batter to the loaf pan and create a checkerboard pattern.
Using an ice cream scoop (or two if you don’t want to clean between scoops), scoop the batters into the pan in an alternating checkerboard pattern.
You’ll want four scoops down the length of the pan and two scoops across.
Repeat for the second layer, but alternate the pattern so the Chocolate Chip Cookie Dough scoops are on top of the Chocolate Fudge Brownie and vice versa.
Continue until all batter has been scooped into the pan.
Now take a wooden skewer or chopstick and gently run it through the top of the batter, making a swirly pattern. Don’t go too crazy with this step or you may end of with a muddled mess instead of nice swirls!
Step 6: Bake the ice cream bread.
Make an aluminum foil tent over the top of the loaf pan. This will help avoid the top of the bread from getting too brown.
Place the pan in the oven and bake for the first 30-40 minutes with the foil tent on.
Bake another 20 minutes or until a skewer poked into the bread comes out clean. Then carefully remove the pan from the oven.
Step 7: Serve and enjoy!
Allow the bread to cool (at least slightly!) before slicing and enjoying the first piece.
While this bread is delicious on its own, I highly recommend adding another scoop of ice cream right on top. Maybe even drizzle it with chocolate syrup, whipped cream, sprinkles or whatever topping strikes your fancy.
