Today, I’m excited to share an oldie, but goodie: Lime Jello Fluff, also affectionately known as the Old-Fashioned Sea Foam Salad in some circles!

For a recipe that is so easy to make, it sure is packed with flavor and texture – tangy lime, fluffy whipped cream, tropical pineapple, chewy marshmallows, and sweet coconut.

What I think you’ll appreciate about this dish is its versatility. It’s perfect as a light, refreshing dessert, but it also holds its own as a side dish alongside your favorite main course. So it’s definitely a recipe to keep on hand for holidays, barbeques, brunches and get-togethers.

Ingredients

1 Box Lime Jello (3 ounces)
1 Tub Cool Whip (16 ounces)
1 Can Crushed Pineapple, undrained (20 ounces)
2 Cups Fruity Mini Marshmallows
1 Cup Sour Cream
1 Cup Sweetened Shredded Coconut
Extra Cool Whip (optional garnish)
Lime Wedges (optional garnish)
Extra Fruity Mini Marshmallows (optional garnish)

Instructions

  1. In a large mixing bowl, combine the lime jello and Cool Whip. Stir until fully combined.
  2. Next, add the sour cream, pineapple, sour cream, marshmallows, and coconut. Gently stir until all of the ingredients are incorporated.
  3. Pour the jello salad into your serving dish and top with garnishes such as extra Cool Whip, lime wedges and extra marshmallows.
  4. Serve immediately or store in the refrigerator overnight.

Tips, Tricks and Substitutions

Don’t Make the Jello: You do not need to make the Jello. You only need to use the powder.

Chill for Success: For the best results, I recommend chilling the fluff salad in the refrigerator for at least a few hours before serving.

Storing the Salad: You can store this jello salad in an airtight container for up to 5 days in the refrigerator. I do not recommend freezing this recipe.

Stronger Lime Flavor: Drain the crushed pineapple before adding to the bowl and add in 2 tablespoons lime juice.

Replace the Sour Cream: If you don’t like sour cream, you can use an equal amount of cottage cheese instead.

Type of Marshmallows: You can use regular white mini marshmallows in place of the fruity marshmallows. If you only have large marshmallows on hand, just cut them into small, uniform pieces.

Experiment with Flavors: While lime is classic and delicious, you can get creative with different flavored jellos like strawberry, orange, or even lemon.
