Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease the donut pan and set aside.
  2. In a large mixing bowl, combine 1 cup of Fruity Pebbles cereal with the buttermilk. Stir lightly and set aside.
  3. In another bowl, mix all dry ingredients for the donuts: flour, baking powder, and baking soda.
  4. Lightly whisk the egg and add it to the bowl with the cereal and buttermilk mixture.
  5. Add oil, vanilla, Greek yogurt (or sour cream), and melted butter to the bowl with the buttermilk mixture. Stir until well combined.
  6. Gradually add the flour mixture to the buttermilk mixture, stirring until thoroughly combined.
  7. Fill each spot in the prepared donut pan about 3⁄4 full. Be careful not to overfill. Using a piping bag to add the dough helps ensure even distribution around the pan.
  8. Bake for 10 minutes or until the tops of the donuts spring back lightly to the touch.
  9. Allow the donuts to cool in the pan for 15-20 minutes.
  10. While the donuts are cooling, prepare the glaze by mixing all glaze ingredients except the cereal until smooth.
  11. Carefully remove the cooled donuts from the pan and dip the tops into the prepared glaze.
  12. Place the glazed donuts on a piece of parchment paper or a plate.
  13. Lightly crush the remaining 1 cup of Fruity Pebbles and sprinkle them across one side of the donut.

Tips For The Best Fruity Pebble Doughnuts

Fresh Cereal: Use fresh Fruity Pebbles cereal for the best flavor and texture in your donuts.

Try Cocoa Pebbles: You could also use Cocoa Pebbles to make this recipe. Just swap out the cereals in the recipe. For the glaze, change up the food coloring and omit the strawberry extract (although a chocolate strawberry donut does sound pretty good too!).

Room Temp Ingredients: Ensure that your egg, butter, and buttermilk are at room temperature before incorporating them into the batter.

Don’t Overmix: Be careful not to overmix the batter when combining wet and dry ingredients. Overmixing can result in tough donuts instead of light and fluffy ones.

Don’t Overfill: When filling the donut pan, don’t overfill and aim for uniform distribution to ensure even baking and consistent sizes. This is where using a piping bag to add your batter comes in handy!

Get Out Air Bubbles: Before putting your donuts in the oven, gently tap or drop your pan down on the counter. This helps the batter settle and gets out any air bubbles.

Doneness Test: Use the “spring back” test to check if the donuts are done. Press lightly on the top of a donut; if it springs back, they’re ready.

Prevent Sticking: To prevent sticking to the pan or crumbling the donuts, give them plenty of time to cool in the pan before removing them.

Glaze, Then Sprinkle: Sprinkle the crushed Fruity Pebbles onto the glaze immediately after dipping. If the glaze hardens, the cereal won’t stick!

Storage: Store the donuts in an airtight container in a cool, dry place for up to 3 days. You can also freeze them for up to 3 months. If freezing, DO not add the glaze. It’s best to make a fresh batch of glaze and frosting them after they have thawed and are ready to serve.
